Now, I know there's AI programs that can isolate/remove music and vocals.. would this apply to a 5.1 mix that includes sound effects as well? It has some of the score mixed into the center and rear channels (unfortunately), so I can't just edit them out in a waveform editor.
Any strategies you guys found worked for you?

You can use Izotope to isolate the dialogue to a reasonable degree. Isolating sfx is harder, virtually impossible. If you are serious about this, you will likely have to re-do the SFX yourself.

Have you tried doing spectral editing? It's the same technique used to make DES (Digitally Extracted Stereo) remixes of audio. You can do it for free with Audacity.

I am actually interested in doing that for some possible projectsI thought of, or having someone do that for said projects should I not be able to do them, these are:
- Castle in the Sky - Japanese audio 5.1 remastered with 2003 Disney American soundtrack (two versions; one with modern American sound effects like the 2003 Disney DVD release and one with original Japanese sound effects like the 2011 reedited dub)
- Kiki’s Delivery Service - Japanese audio 5.1 remastered with 1998 Disney American soundtrack
- Sonic the Hedgehog 1 and 2 with video game music and sound effects
