Agree. If it would so (relatively) simple, why studio would bother to rescan and/or regrade their movies? Just slap a nice SDR2HDR chip in every BD player, and that's all!
It can be done, but result will never be the same as properly mastered 10bit AND HDR... it's like if we upscale an SD source to HD - it may be a bit better than hardware real time upscale, but it will never be the same of proper HD material... at the contrary, if we downscale an HD source to SD, usually it's better than original SD source, due to a lot of reasons - as it seems that HDR2SDR, when properly done, is usually (a bit? much?) better than SDR (Matrix UHD HDR2SDR Vs Matrix BD in the same package).
