So can somebody more in the know make a definitive list of the best versions (Fan Versions Included)?

I picked up some recommended releases a years back but that seems to have changed quite a bit, I am really lost now when it comes to these films!

I'm not a fan of recent "Kino Lorber" releases. For the "The Dollars Trilogy" I think the Italian and German releases are still the best :

COR : The Italian BD (01 Distribution) and German BD (3L Film) use the same master and are pretty the same. I don't have the release from "Eagle Pictures" to compare.

AFOD : The German release (Universum Film) have the original English mono and is more sharpness than the Italian BD (RHV).
I personally prefer the colorimetry of the Italian BD.

FAFDM : The German release (Universum Film) is uncut, have the original English mono and is more sharpness that the "MGM" release who use the same master.
I prefer the colorimetry of the Italian BD (Mondo), but this one is less sharpness and cropped.

GBU : "MGM Remastered", "Eagle Pictures" and "Kino Lorber" releases have too much yellow and teal. The Italian BD (Mondo) is still the best.
The Italian release from "01 Distribution" use the same master and are pretty the same.

OUATITW : The "Paramount" release and Italian BD (01 Distribution) use the same master and are pretty the same.

DYS : The Italian release from "Eagle Pictures" have a better colorimetry and better contrast than the first Italian BD (01 Distribution). They use the same master.

OUATIA : For Theatrical Cut the "WB." release is the only available. For Extended Director's Cut the Italian release from "Eagle Picture" have a better encode than the first Italian BD (2012) and have the correct aspect ratio, not cropped to 1.78:1 like the "WB." BD (2014).

Once Upon Time In The West

Quote:
Once Upon Time In The West had a showing on French television a few weeks ago in a gorgeous HD print with the best colour I’ve seen, far superior to the Blu Ray release we currently have available.

I read the so called "new" release is the same as the last one so maybe French tv got theirs from another source. Certainly better from the colour pov and of course it was the full length French release.

Saw it in October in a cinema in Toulouse, great to see again on a huge screen, and the print was the same as the Blu Ray, so in many ways the tv broadcast was a revelation!

Currently watching the broadcast on French television , the best transfer I’ve seen, sharp focus, gorgeous colour palette, rich and varied. A real treat.

I watched it on GRIT TV yesterday, and the color was amazing.

Never heard of that channel. I read that above, yes, but it's a testimony from November 2019. The one speaking about the French channel is from January 2020. It seems there were 2 separate broadcastings, and I don't think GRIT TV is in France.

So, W9. That one I know of. Except it's one of those channels I can record but can't extract the recording from my Freebox hard drive. They protect their programs. It's a channel that belongs to the M6 Group, and the only channel of said group I can extract the recording from my Freebox hard drive would be 6ter. I'll have to keep an eye open for future reruns on 6ter, or on another channel that might have the same master. My most recent recordings of this movie are from May and August 2018, on Paramount Channel and France 3, and they seem to look like the Blu-ray master. The next rerun on April 13th, my birthday, as it turns out, will be on Paris Première, also a M6 Group channel that protects their programs, sadly.
