I'm planning to replace the video of the Pacific Rim UHD with my remux with Dolby Vision, is it possible to replace the video and edit the BD structure in the already existing disc without needing another disc to burn to?

I never could. You're talking about UHD though... mmmh. I don't know if the workflow is entirely different for the 4k format.
The thread might be outdated but could lead you in the right direction. If you manage, let us know.

You might be able to use BD Rebuilder to make it a compatible disc, but you'd have to manually tweak stuff I'm unfamiliar with.

Besides replacing the movie file with my higher quality version and replacing the movie playlist files with seamless branching playlists with my updated ones, is it also possible to edit menus with this tool?
