I'm trying to extract the trivia subtitle track (in VOBSub form) from the first Sam Raimi Spider-Man DVD and sync it to the UHD, but I cannot find a way to extract the subtitle stream and convert it to PGS, any solution out there?

Assuming it's just text and no images, you could just OCR it and just leave it as plaintext. Would make it easier to make any edits as well, and is compatible with pretty much any player. It just isn't BD compatible if that's what you're going for.

SubtitleEdit would be one solution for whole process. Rip from IFO/VOB, OCR, resync, restyle if needed, export to SUP which is the format for muxing into BD/UHD.

You can use MakeMKV to remux DVD into MKV, then use MKVExtract to extract the VobSub, and then process it in anything, e.g. BDSup2Sub.
