As far as I know there are no open matte of both extended versions.

IIRC there are open matte versions of both the first two movies; about the others (again IIRC) the extended versions seen on TV include open matte versions of the theatrical cut (except "Azkaban") plus cropped extended footage in comparison to deleted/extended scenes found on BDs.
