[Idea] Reservoir Dogs (1992) - Black and white / Open matte

Remember how Quentin Tarantino originally intended to make his feature film debut, Reservoir Dogs, using black and white 16mm stock? Well, for another early project, I plan on restoring the film in accordance with his original low-budget vision. Obviously, this restoration will use Carolco logos as seen on early trailers. Preliminary specs are as follows:

VIDEO
Resolution: 1080p (BD), 480p (NTSC DVD), 576p (PAL DVD)
Aspect ratio: 1.37:1, 2.35:1, and 1.78:1

AUDIO
English (Dolby Stereo SR 4.0: left, center, right, and surround)
English (6-track: left, left-center, center, right-center, right, and surround)
French (Dolby Stereo SR 4.0: left, center, right, and surround)

The above spec list is not final, which is most true for the subtitles; I might have to drop some of the subtitle options, ultimately, and I have no illusions that I'll be able to get everything I want for this project. But I'll do my darnedest with what I do have.

In addition to the above, I'll also be doing an NC-17-rated extended cut with more violence and three deleted scenes ripped straight from the Artisan 10th Anniversary DVD (the 1.37:1 version, needless to say, will be culled from Live's earlier DVD, which is more of a true open matte than later releases), and I'll additionally be doing a chronological cut which rearranges all scenes in chronological order. That's three cuts, all with three different aspect ratios. Extended cut scenes will be subtitled for foreign language presentations, with the subtitles appearing to be burnt into the picture via seamless branching.

If you are just working on that, you should also consider to make a multi open matte, and add the missing borders from the Full Frame Version of the French Metropolitan Coffret Collector 3DVD Edition from 2004.  Dodgy
You know, like multiangle, you could preserve various framing and bring that experience into glourious HD. COnsider a six video Stream, multi angle experience:
Eyedrop
Angle 1: PAL Area Full Frame experience (theatrical-color)
Angle 2: PAL Area Full Frame experience (b/w)
Angle 3: NTSC Area Full Frame experience (theatrical-color)
Angle 4: NTSC Area Full Frame experience (b/w)

If I were to do anything like that, I couldn't do anything less than a dual-layer DVD. According to Andrea's Kush Gauge calculator, in order to achieve optimal quality I'd need at least 2 mbps, approximately, per video stream.

I like the artwork. I see the Dolby digital logo, any PCM or DTS-HD with these releases?

And 6x2=12mbps, over the DVD compliance - so a dual-layer DVD isn't enough; you need at least two discs for that, and they you can also go for higher bitrate per video stream.

More likely than not the Dolby Stereo 4.0 tracks will be PCM, ultimately.
