So you guys suggest to stick with 720p on iTunes or 1080p if the higher bitrate was used?

If the bitrates are as you listed, I would suggest sticking with 720p. Your friend can make a simple test, have him download a movie in 720p which he already has on 1080p and make a couple screenshots.
