After a couple of testing with williarob a few months ago, the best capture for audio and video of a LD on macOS, including bit-perfect audio, is the following
Video: LD Player via composite > Hauppage HD-PVR component video out > Blackmagic Intensity (any version that works on your system)
Audio: LD Player via toslink > digital in of mac > QuickTime 7 Pro
This will result in a 100% in sync A/V, while capturing bit-perfect audio
Note: This will only work up to macOS HighSierra. Any versions above you can no longer capture the video and digital audio in a single app. At least I haven't found a solution that could replace QT7 perfectly.
While it's possible to use Logic Pro X or Chocos Reaper to only capture the audio bit-perfect, you will run into sync issue with the captured video. I tried it many times and it never worked. QT7 however was spot on.
