Sometimes a 2.0 mono track will be labeled as stereo but is really a dual mono track. Sounds like Eureka were given a 2.0 track from Lazy 'ol Paramount that was indeed stereo and not mono, though it's rare for Eureka to make this mistake since they're usually good at sourcing original audio when possible..

Is the stereo a downmix of the remix, or just an alternate stereo track?

From what Bendermac is saying, it sounds like a 2.0 downmix of the 5.1 that is also on the US Paramount BD.
