Interesting, could be a typo but then again it may be a late release (lddb don't list the release date) after the DVD remaster, in which case it may be the theatrical Dolby Stereo mix.
FWIW despite being horrifically revisionist and dropping SFX/music cues, the Rydstrom remix does sound pretty powerful as a far field mix. The man just needs to be banned from near field mixes

I've seen a 35mm print of the 2001 re-release with the new 5.1 mix?

Yes there was a limited theatrical re-release around the time of the remastered DVD, in the UK at least. I think there was definitely an Optimum Releasing logo before the Orion logo, there was possibly an MGM logo as well. The image was the original photochemical timing (albeit printed onto newer LPP stock, so probably not 100% accurate timing-wise) but the audio was the Rydstrom 5.1 mix, and boy was it beefy. A couple of times it defaulted to the Dolby Stereo over on the optical track due to wear and tear.
If the PCC in London shows a Terminator 35mm screening it's of this re-issued print. Recently they've been screening a 35mm T2 print which is interesting as there was no available T2 35mm print in the UK for years, only the 70mm print.

Faux Stereo is the 85 home video mix as on my release. Possible that this LD is a 2001 release with the 5.1 remix in Dolby Surround?

So, the LDDB states it as Dolby Surround, the LD backside (see image in OP) just states Dolby Stereo, so my guess: It is just the home media faux Stereo Mix on the disc, and the LDDB entry is just not correct.
