The old Toho Blu-rays of Seven Samurai, Yojimbo, Sanjuro, The Hidden Fortress, and The Bad Sleep Well all have 5.1 remixes included.
Seven Samurai also had a Dolby Stereo remix, which was included on the Criterion Blu-ray.

I hope you can sync these to the 4K UHDs as well, when they come out.

The more options, the better, even if said additional options won't be purist.

i don't think poor quality soundtracks should be included just for the sake of "more options" or completion. narrow it down to the ones that sound the best and include those. many of these older 5.1 tracks that have been upmixed from mono sources not only sound poor, but are just a big waste of space. often times they take the mono track, spread it into the L/R and then the LFE and surround tracks are completely empty/silent.

take for example the seven samurai 5.1 mix. the L/C/R all sound more or less identical and the LFE and surround tracks are almost completely unused. there's no reason to listen to it when the BFI streaming mono exists and sounds significantly better. hopefully the upcoming 4k UHD will sound great but i doubt it.

The 1080p mixes I am talking about are the 5.1 remixes (and the Dolby Stereo mix for Seven Samurai).
I know they are not the original mixes, but it would be great to sync these revisionist remixes to the UHDs.
Some people probably prefer these mixes. In fact, I first watched Yojimbo with the 5.1 remix (it's a long story, but I would have honestly preferred the Perspecta 3.0 stereo).

It does look like Toho thinks the Kurosawa 5.1 remixes (and the 5.1 remix of King Kong vs. Godzilla), are not that good, and they would rather include only the original mixes for the 4K releases.
Strangely, some later Toho tokusatsu Blu-rays like Varan, Dogora, and Space Amoeba.
Also, Bye Bye Jupiter has a 5.1 remix but only on the US DVD releases, the Japanese DVD and Blu-ray releases only have the original Dolby Stereo mix.

Why would anyone prefer them though? I wouldn't even call them revisionist because they are still mainly mono and haven't had foley added or any other changes made. They are just bad remixes done so they can say "5.1" on the back of the case. If you really want 5.1, just upmix the good mono soundtrack.

The Hidden Fortress, The Bad Sleep Well, Yojimbo and Sanhuro were all originally in Perspecta 3.0 stereo with the mono mix being an alternate option. These 5.1 remixes are very rare, especially outside Japan.
They are studio-made upmixes, and not AVR upmixes. And many of these 5.1 mixes are proper remixes with actual stereo effects (see the many 5.1 remixes of the Showa Era Godzilla films, which were remastered by the same people that remastered these Kurosawa films). A straightforward upmix would just duplicate the mono or Perspecta stereo across the surrounds.

That said, I personally prefer the mono 3.0 mixes as much as possible for these old pre-Dolby Stereo Toho films. Or 3.0 Perspecta stereo for the few movies that had them originally (Yojimbo, Sanjuro, The Hidden Fortress, The Bad Sleep Well, The Mysterians, Varan, The H-Man, The Secret of the Telegian, Battle in Outer Space), or 4.0 surround for the few movies that had them originally (High and Low, Kagemusha, King Kong vs. Godzilla, Mothra, The Last War, Gorath, Magnitude 7.9)
