I should add I always save audio from Hi-Fi Stereo tapes in 24-bit, 48kHz. It's a bit of an over-kill for VHS but it's better to have room

Weird, Windows control panel doesn't let me set any other option than 16bit/48kHz for my audio card's Line In, but Audacity allowed me to capture at 96kHz. Not that I can hear any difference obviously.

16-bit is fine.
I'm not sure how to help you with that. Are you sure that your soundcard can do more than 16-bit? Surely it does

It should support 24 bit. Not sure what's up with that, but it doesn't matter for VHS I guess.

I actually haven't thought of that. Yes, 24-bit is pointless then, but 16-bit is plenty for VHS.

Alright so what's the best way of bringing a VHS capture into modern formats?
Let's say I want to encode it with x264. Deinterlace or no? If yes, do I do it before encoding, or can I just use x264 for that?

I'd say IVTC before then encode with x264 but that's me.

You mean inverse telecine? My VHS tapes are all PAL, they're not telecined.
