I didn't as I like the current tracks and the DVD mono sounds blah. I don't think anyone synced the LD, but I may buy one and get it done later on the way.

I have recordings of the LD and the 90 VHS and they both sound poor compared to the blu-ray that has quite a bit more fidelity iirc. LD top/Blu downmix bottom: https://i.imgur.com/fJtV1SC.png

Oh yes, I never tried to downmix the Blu/UHD tracks to mono, I'm guessing the final results would be akin to the mono optical track with better fidelity.
I know there are some extra noises at some moments on the stereo track/5.1 I'm guessing those were stuff buried in the mono downmix by either the downmix or the EQ.

Those 2.0 aren't downmixes of the 5.1, that would be pointless. They are stereo mixes made from DME stems, in most cases, without any adjustment beyond balancing all three tracks.
Personally, I prefer a higher generation stereo from the DME than an old optical battered print soundtrack. Though I get the purist idea. There's also the case that they went mono to save costs on prints (as well as making sure the prints would fits all theaters regardless of their set-ups). If those DME were originally mixed stereo (including the music), then collapsed to mono in the end due to saving costs, and market rules, I'm fine with restored DME stereo tracks.

And yeah, as a purist I'm the opposite, I'd prefer an optical track to a spruced up remix. But wouldn't it be easier to satisfy everyone by including both? Hopefully someone will come up with a genuine mono track soon.

I'm not sure, the 5.1 played in stereo sounds different (if I'm not confusing titles). I think the DVD was synced already, also we got the french LD dub synced, but to the old versions on Blu. I don't think anyone have tried to sync the DVD or LD mono to the UHD yet.
