Today I added 400+ entries, mainly Laserdiscs, but also some CED and VHD titles; it is NOT possible to compile a list of pan&scan, fullscreen, academy titles released on home media, as there are more than 20000 titles just on laserdisc - on VHS they were surely more, and probably the same for DVD.

I could be wrong on this... But I believe Spider-Man 3 was shown in 16:9 open matte on television.

Didn't realize Freddy vs. Jason was open matte... It's been a long time since I've seen that movie. Maybe I'll have to check out my old DVD copy!

UPDATE
I added several hundred new titles, corrected many errors and double entries, and put back the fullscreen list, as I'm pretty sure they are all open matte - still to be confirmed, though, but it's easiear to have all titles in just one list.
I put in the first post just the best version per title, per aspect ratio; more versions, and detailed info if available, are availble in my blog list, that will be the most updated: http://blog.sporv.com/open-matte-master-list
Also, do not forget to take a look at the workprint (and TV version, and more) master list: http://blog.sporv.com/workprints-master-list

UPDATE
Added a lot of new entries, now over 2000. Sadly, such long list could not be hosted in the first post, so it will be hosted only in my blog.

Damn shame that the open matte is horrible quality and looks like a transfer from a duped VHS
The 1990 version of that film has always been my favorite. I think it's an awesome remake that doesn't get enough credit. At least the BD release is flawless, full of grain, balanced colors and contains the original theatrical mix in lossless DTS-HDMA

I can confirm a 16:9 open matte version of Team America exists. Whether it's been seen anywhere outside of the Sony PSP UMD format is anyone's guess.

Do you want to add an unknown b-movie I've just seen on VHS or are you sticking to widely-known ones?

What defines what "unknown b-movie" is, or what "widely-known" movies are?
Put it on the list.. if there is somewhere infos on that movie, link it...
