Audiowise it was like taking off the constraints because you could get the source mix in 6 track mag vs 35mm dolby stereo matrix. Earlier on in the 60's it would have been 6 track mag vs 35mm mono for general release films.

So would they crop if it was shot in scope and open it up if shot flat?

There is no hard and fast rule on how to present 35mm on 70mm.

Some scope films were cropped (which was more common) others had small black bars at the top and bottom. Same thing goes for 1.85 movies, cropped or black bars on the sides.

Both ways are correct.
